Slow Cooker Potato & Ham Soup

Ingredients
  

  • 5 cups potatoes diced & peeled (5-6 large potatoes in ½ inch (1.5 cm) cubes)
  • 1 ½ cups diced celery 2 stalks
  • 1 ½ cups diced carrots 2 carrots
  • 1 cup diced onion 1 onion
  • 2 cups diced cooked ham 250 g
  • 4 cups vegetable or chicken broth 1 L
  • 1 tsp dried dill 5 ml
  • 1 tsp garlic powder 5 ml
  • 1 tsp salt 5 ml
  • 1 tsp pepper 5 ml
  • ½ cup all-purpose flour 125 ml
  • 1 can evaporated milk 12 oz or 354 ml
  • 2 cups half-and-half cream 500 ml
  • 2 Tbsp fresh dill, green onions or chives for garnish (30 ml)

Instructions
 

  • Combine potatoes, celery, carrots, onion, ham, broth, dill, garlic powder, salt, and pepper in slow cooker. Cook on high for 4-5 hours or on low for 7-8 hours.
  • In saucepan, over medium heat, gradually whisk together flour and evaporated milk. Cook until thickened, about 4-5 minutes.
  • Open the cans of tomatoes, corn, and green chiles. Pour cans and all of their contents (liquid) into the slow cooker.
  • At the end of cooking time, stir in thickened milk and half-and-half cream. Cover and cook on low for an additional 15 minutes. To prevent curdling do not boil and stir occasionally.
  • Garnish with fresh dill, green onions or chives before serving.
